Vianoce 2013 / Christmas 2013

Toto sú štyri základné koláčiky, ktoré sa mi najviac spájajú s Vianocami a bez ktorých si naše Vianoce ani neviem predstaviť. Sú to vanilkové rožteky, medvedie labky, medovníčky a linecké kolieska.

Medvedie labky mám rada, ale nikdy nepatrili medzi moje najobľúbenejšie, rozhodla som sa ich pripraviť práve preto, že ich vždy pripravuje moja mamka a proste k našim Vianociam patria.
V mise vymiešame 150g masla so 100g práškového cukru a 1 č.l. vanilkového extraktu. Pridáme vrchovatú lyžicu kakaa, 200g hladkej múky, 60g mletých vlašských orechov, asi 1/2 č.l. škorice a štipku mletého klinčeka. Vymiešame cesto, ktoré necháme v chladničke cca 2 hod oddýchnuť. Do formičiek vtláčame cesto v tenšej vrstve a pečieme v rúre rozohriatej na 170°C. Necháme na plechu chladnúť, kým sa s formičkami nedá manipulovať, potom vyklopíme a hneď obaľujeme v zmesi práškového a vanilkového cukru.



Linecké koláčiky. Tak o tých som už písala minulý rok tu, kde nájdete aj recept, ale keďže sa jedná o moje úplne najobľúbenejšie koláčiky nie je vôbec vylúčené, že o nich budem písať zase o rok ;-). 

Vanilkové rožky sú jemné a krehké s chuťou vanilky a orechov. Pripravíme si ich zmiešaním 200g masla, 50g práškového cukru, 2 žĺtok, 1č.l. vanilkového extraktu, 100g mletých orechov a 280g polohrubej múky. Cesto si taktiež necháme dobre vychladiť a potom formujeme rožteky o približne rovnakej veľkosti. Existujú na to aj plechy, ale pravdu povediac ja mám vanilkové rožky radšej trošku bucľatejšie a nech je predsa vidno, že sa jedná o ručnú prácu a nie priemyselnú výrobu :-). Pečieme v rúre rozohriatej na 170°C a ešte teplé obaľujeme v zmesi práškového a vanilkového cukru.

Medovníky. Tak bez nich Vianoce nie sú Vianoce. Pečú sa dopredu, aby stihli zmäknúť, ale priznám sa, že to nikdy nestihnem dostatočne skoro a keby som to aj stihla, určite by pri mne do Vianoc nevydržali. Ich príprava a krásna vôňa najlepšie navodí Vianočnú atmosféru. Stále robím 2 dávky, jednu na zjedenie a jednu ako ozdobu na stromček. Pri tých na stromček je tu každý rok aj pokus o zdobenie cukrovou polevou, ale tohto roku som konečne priznala, že to vždy ostane len pri pokuse a s výsledkom mojej práce sa tu radšej chváliť nebudem ;-).
Cesto vypracujeme zo 60g masla, 2 vajíčok, 2 lyžíc medu, 1č.l. vanilkového extraktu, 160g práškového cukru, 400g hladkej múky, cca 1 1/2č.l. škorice a 1/2č.l. klinčekov. Necháme v chladničke odležať cez noc, vyvaľkáme a vykrajujeme rôzne tvary, potrieme vajíčkom, do stredu môžeme dať vlašský orech a pečieme pri 170°C, kým nie sú pekne zlaté.

These are the four basic cookies that are most associated with Christmas for me, and I can not even imagine Christmas without them. It is vanilla rolls, bear paws, gingerbread and Linzer cookies.

"The Bear Paw" (this is how we call them) I like them but they are actually not my favourite ones but I decided to prepare them because my mother always does and they just belong to our Christmas. Mix 150g of butter, 100g of powdered sugar and 1tsp of vanilla extract in a bowl. Add heapped tablespoon of cocoa, 200g of plain flour, 60g of ground walnuts and about 1/2tsp of cinnamon and pinch of ground cloves. Mix the dough and refrigerate for about 2 hours. Press the dough into the molds in thinner layer and bake in the oven preheated to 170°C. Leave the tin cool until the mold can be handeled with and then shell them out and roll them in a mixture of powdered and vanilla sugar.

Linzer cookies are the ones I have already written about here, you can find the recipe here, but as these are my absolutely favorite cookies it is quite possible that I am going to write about them again next year .

Vanilla rolls are delicate and soft with distinct wallnuts and vanilla flavour. I prepare them by mixing 200g of butter with 50g of powdered sugar, 2 egg yolks, 1tsp of vanilla extract, 100g walnuts and 280g of all purpose flour. Let the dough cool properly and then shape the mini rolls of approximately equal size. There are also the tins for vanilla rolls, but I prefer them little bit chubby and I think they should look that they are homemade rather than mass produced :-). Bake them in the oven preheated to 170°C.  Roll them in the mixture of powdered and vanilla sugar while still warm. 

There is no Christmas without gingerbread. They should be baked in advance to give them time to soften, but I must admit that I never bake them too much in advance, and even if managed to do so, they wouldn't last longer than a few days when I am around. Their preparation and beautiful smell are two of the most essential Christmas atmosphere ingredients. I usually make 2 batches. One for eating and one for decorating the tree. Every year I'm trying to decorate them with icing for hanging it on the christmas tree, but this year I had to admit that this will forever remain just my wish which is by the way  the reason why I am not going to show you the results of my decorating work ;-)
For the  dough mix 60g of butter, 2 eggs, 2tbsp of honey, 1tsp of vanilla extract, 160g of powdered sugar, 400g of all purpose flour and about 1 1/2tsp of cinnamon and 1/2tsp of ground cloves. Refrigerate the dough overnight, roll the dough and cut the cookies with different shapes using cookie cutter, give them an eggwash, press in the middle walnut if you like and bake in the oven preheated to 170°C until nicely golden brown.

Špaldové sušienky s brusnicami a orechami / Spelt flour cookies with cranberries and walnuts

Tak na týchto sušienkach som normálne závislá. Už som ich piekla 3 krát a za každým som dúfala, že aspoň niečo ostane na Vianoce, ale to nehrozí. Výhodou týchto sušienok je to (samozrejme okrem toho, že sú jednoduché), že sú o niečo zdravšie ako ostatné klasické vianočné pečivo. Síce v tých množstvách v ktorých som ich zjedla ja, už sa asi o zdraví ani hovoriť nedá :-). Neviem, ako je to u Vás, ale nám vianočné pečivo najviac chutí pred Vianocami.

Maslo vymiešame s cukrom, pridáme žĺtok a pokračujeme v miešaní. Do misy prisypeme obe múky, vanilku, citrónovú kôru, brusnice a orechy. Miešame (ideálne v robote), kým sa cesto nespojí, potom ho vyklopíme na potravinársku fóliu a vyformujeme valček s priemerom cca 5cm a dáme poriadne vychladiť do chladničky, alebo na chvíľu do mrazničky. Krájame na 1 - 1,5 cm kolieska (cca 20ks), ktoré ešte trošku roztlačíme (nemusí byť, ale ja mám rada, keď je každá sušienka trošku nepravidelná). Presunieme na plech s papierom na pečenie a pečieme cca 15 minút, kým nie sú jemne zlaté, v rúre rozohriatej na 170°C.


Príjemné vianočné pečenie prajem. 


I am already addicted to this cookies. I've baked them for 3 times already and each time I hopped that at least something would last until Christmas, but that is impossible. The advantage of this cookies is, not only that the preparation is simple, but also they are healthier than other Christmas treats. Although in such quantities I have already eaten them, one can not talk about health any longer :-). I do not know how about you, but in our household, Christmas sweets taste even better before Christmas.



Mix butter with sugar until pale, add egg yolk and continue mixing. Sift both flours in the bowl followed by vanilla, lemon zest, cranberries and walnuts. Mix alltogether (in the standmixer it is pretty easy)  until the dough joins together, then wrap it up in cling film, and form the roll with about 5 cm in diameter  and refrigerate until firm or put it in the freezer for a while. Cut it to 1-1.5 cm thick circles  (you should get about 20 pcs) and press down on top of them a little (this is not necessary but I like it when they are not evenly flat). Move them on the tin linned with parchment paper and bake in the oven preheated to 170° C for about 15 minutes until they are slightly golden brown.

Krúpová polievka s kapustou / Barley soup with cabbage

Keď sa dni začnú ochladzovať a zima sa už neodvrátiteľne blíži, respektíve je už tu, mám potrebu jesť niečo výdatnejšie, čo zahreje, ale ja zároveň zdravé. Ideálnou voľbou na takéto dni je u mňa polievka. Tentokrát som pripravila hustú krúpovú polievku s kapustou, ktorú si môžete zabaliť aj so sebou do práce. Krúpová sa zvykne robiť z vývaru z údenej šunky, ale v našom, zdravšom prístupe vám bohate postačia cca 3 tenučké plátky slaninky, alebo napr. schwardzwaldskej šunky. Pokiaľ ste vegetariáni, alebo nič údené akurát po ruke nemáte, vôbec nevadí, polievočka bude aj tak výborná. 

S ďalšou zmenou s ktorou sa musím v tomto období vysporiadať je, že moje bylinky sú už zazimované. Samozrejme, nie že by sa čerstvé bylinky nedali kúpiť to nie, len na to akosi zabúdam, keďže som mala pár mesiacov k dispozícii plný balkón byliniek, a že sa im tento rok krásne darilo. Takže pri tejto polievočke si vystačíme so zásobami v kredenci a chladničke. 


Najprv si na malé kocky nasekáme všetku zeleninu a na troške olivového oleja ju za stáleho miešania restujeme spoločne so slaninkou, alebo šunkou, až kým jemne zozlatne. Pred koncom restovania pridáme cesnak a len krátko ho premiešame s restovanou zeleninou. Do hrnca pridáme krúpy a zalejeme vodou (množstvo vody záleží od toho akú hustú polievku chcete). Pridáme soľ, čierne korenie, bobkový list, nové korenie, feferónku a vopred namočené sušené huby. Spoločne varíme, kým krúpy nezmäknú, vtedy pridáme nakrájanú malú hlávku kapusty (hlúbik vyrežeme) a necháme variť, kým kapusta zmäkne. V prípade potreby ešte dochutíme a okyslíme červeným vínnym octom a pridáme petržlenovú vňať (ja mám svoju zamrazenú). Polievku buď podávame len tak, alebo s nastrúhaným syrom typu parmezán, grana padano, alebo pecorino.

When the days are getting cooler and the winter arrival is unavoidable, hence it is already here, I am in need to eat something heartier, something what warms me up and of course something healthy as well. And the perfect choice for me is a soup. This time I went with a hearty barley soup with cabbage, which you can take with you to work. In our country, a barley soup is usually made of smoked ham broth but in this case I chose healthier approach with barely 3 thin slices of bacon or some smoked ham, it will be just enough to get the final taste. And if you are vegetarian or just don't have any smoked stuff, forget adding it and I am sure that soup will still be just as great without it. 

There is another thing these days I need to carry in my mind when cooking and it is the fact that my "herb garden" has already taken its winter break. Of course I can buy fresh herbs but this is something I often forget as I was used to using mine for the past few months and let me tell you, this year they were absolutely prolific. So in this recipe we will only need stuff what's "on stock", in our cupboard and fridge.


First, dice all vegetables and sauté them on a splash of olive oil together with bacon or ham. Keep stirring constantly until it all becomes slightly golden. Before the end of sautéing, add chopped garlic and
just stir briefly with vegetables. Add barley folowing with the water to the pot (the amount of water depends on how thick soup you prefer). Season with salt and pepper, bay leafs, allspice and some chilli if you like and add pre-soaked dried mushrooms. Cook until barley is just tender. Then add chopped small cabbage head (cut out inner solid part of cabbage) and cook it until cabbage softens slightly. Season more if necessary and add chopped parsley (mine was frozen) and you will probably need to add some sourness as well. I used red wine vinegar. Serve the soup like plain or with grated cheese such as Parmesan , Grana Padano or Pecorino.
