Vianoce 2013 / Christmas 2013

Toto sú štyri základné koláčiky, ktoré sa mi najviac spájajú s Vianocami a bez ktorých si naše Vianoce ani neviem predstaviť. Sú to vanilkové rožteky, medvedie labky, medovníčky a linecké kolieska.

Medvedie labky mám rada, ale nikdy nepatrili medzi moje najobľúbenejšie, rozhodla som sa ich pripraviť práve preto, že ich vždy pripravuje moja mamka a proste k našim Vianociam patria.
V mise vymiešame 150g masla so 100g práškového cukru a 1 č.l. vanilkového extraktu. Pridáme vrchovatú lyžicu kakaa, 200g hladkej múky, 60g mletých vlašských orechov, asi 1/2 č.l. škorice a štipku mletého klinčeka. Vymiešame cesto, ktoré necháme v chladničke cca 2 hod oddýchnuť. Do formičiek vtláčame cesto v tenšej vrstve a pečieme v rúre rozohriatej na 170°C. Necháme na plechu chladnúť, kým sa s formičkami nedá manipulovať, potom vyklopíme a hneď obaľujeme v zmesi práškového a vanilkového cukru.



Linecké koláčiky. Tak o tých som už písala minulý rok tu, kde nájdete aj recept, ale keďže sa jedná o moje úplne najobľúbenejšie koláčiky nie je vôbec vylúčené, že o nich budem písať zase o rok ;-). 

Vanilkové rožky sú jemné a krehké s chuťou vanilky a orechov. Pripravíme si ich zmiešaním 200g masla, 50g práškového cukru, 2 žĺtok, 1č.l. vanilkového extraktu, 100g mletých orechov a 280g polohrubej múky. Cesto si taktiež necháme dobre vychladiť a potom formujeme rožteky o približne rovnakej veľkosti. Existujú na to aj plechy, ale pravdu povediac ja mám vanilkové rožky radšej trošku bucľatejšie a nech je predsa vidno, že sa jedná o ručnú prácu a nie priemyselnú výrobu :-). Pečieme v rúre rozohriatej na 170°C a ešte teplé obaľujeme v zmesi práškového a vanilkového cukru.

Medovníky. Tak bez nich Vianoce nie sú Vianoce. Pečú sa dopredu, aby stihli zmäknúť, ale priznám sa, že to nikdy nestihnem dostatočne skoro a keby som to aj stihla, určite by pri mne do Vianoc nevydržali. Ich príprava a krásna vôňa najlepšie navodí Vianočnú atmosféru. Stále robím 2 dávky, jednu na zjedenie a jednu ako ozdobu na stromček. Pri tých na stromček je tu každý rok aj pokus o zdobenie cukrovou polevou, ale tohto roku som konečne priznala, že to vždy ostane len pri pokuse a s výsledkom mojej práce sa tu radšej chváliť nebudem ;-).
Cesto vypracujeme zo 60g masla, 2 vajíčok, 2 lyžíc medu, 1č.l. vanilkového extraktu, 160g práškového cukru, 400g hladkej múky, cca 1 1/2č.l. škorice a 1/2č.l. klinčekov. Necháme v chladničke odležať cez noc, vyvaľkáme a vykrajujeme rôzne tvary, potrieme vajíčkom, do stredu môžeme dať vlašský orech a pečieme pri 170°C, kým nie sú pekne zlaté.

These are the four basic cookies that are most associated with Christmas for me, and I can not even imagine Christmas without them. It is vanilla rolls, bear paws, gingerbread and Linzer cookies.

"The Bear Paw" (this is how we call them) I like them but they are actually not my favourite ones but I decided to prepare them because my mother always does and they just belong to our Christmas. Mix 150g of butter, 100g of powdered sugar and 1tsp of vanilla extract in a bowl. Add heapped tablespoon of cocoa, 200g of plain flour, 60g of ground walnuts and about 1/2tsp of cinnamon and pinch of ground cloves. Mix the dough and refrigerate for about 2 hours. Press the dough into the molds in thinner layer and bake in the oven preheated to 170°C. Leave the tin cool until the mold can be handeled with and then shell them out and roll them in a mixture of powdered and vanilla sugar.

Linzer cookies are the ones I have already written about here, you can find the recipe here, but as these are my absolutely favorite cookies it is quite possible that I am going to write about them again next year .

Vanilla rolls are delicate and soft with distinct wallnuts and vanilla flavour. I prepare them by mixing 200g of butter with 50g of powdered sugar, 2 egg yolks, 1tsp of vanilla extract, 100g walnuts and 280g of all purpose flour. Let the dough cool properly and then shape the mini rolls of approximately equal size. There are also the tins for vanilla rolls, but I prefer them little bit chubby and I think they should look that they are homemade rather than mass produced :-). Bake them in the oven preheated to 170°C.  Roll them in the mixture of powdered and vanilla sugar while still warm. 

There is no Christmas without gingerbread. They should be baked in advance to give them time to soften, but I must admit that I never bake them too much in advance, and even if managed to do so, they wouldn't last longer than a few days when I am around. Their preparation and beautiful smell are two of the most essential Christmas atmosphere ingredients. I usually make 2 batches. One for eating and one for decorating the tree. Every year I'm trying to decorate them with icing for hanging it on the christmas tree, but this year I had to admit that this will forever remain just my wish which is by the way  the reason why I am not going to show you the results of my decorating work ;-)
For the  dough mix 60g of butter, 2 eggs, 2tbsp of honey, 1tsp of vanilla extract, 160g of powdered sugar, 400g of all purpose flour and about 1 1/2tsp of cinnamon and 1/2tsp of ground cloves. Refrigerate the dough overnight, roll the dough and cut the cookies with different shapes using cookie cutter, give them an eggwash, press in the middle walnut if you like and bake in the oven preheated to 170°C until nicely golden brown.

Špaldové sušienky s brusnicami a orechami / Spelt flour cookies with cranberries and walnuts

Tak na týchto sušienkach som normálne závislá. Už som ich piekla 3 krát a za každým som dúfala, že aspoň niečo ostane na Vianoce, ale to nehrozí. Výhodou týchto sušienok je to (samozrejme okrem toho, že sú jednoduché), že sú o niečo zdravšie ako ostatné klasické vianočné pečivo. Síce v tých množstvách v ktorých som ich zjedla ja, už sa asi o zdraví ani hovoriť nedá :-). Neviem, ako je to u Vás, ale nám vianočné pečivo najviac chutí pred Vianocami.

Maslo vymiešame s cukrom, pridáme žĺtok a pokračujeme v miešaní. Do misy prisypeme obe múky, vanilku, citrónovú kôru, brusnice a orechy. Miešame (ideálne v robote), kým sa cesto nespojí, potom ho vyklopíme na potravinársku fóliu a vyformujeme valček s priemerom cca 5cm a dáme poriadne vychladiť do chladničky, alebo na chvíľu do mrazničky. Krájame na 1 - 1,5 cm kolieska (cca 20ks), ktoré ešte trošku roztlačíme (nemusí byť, ale ja mám rada, keď je každá sušienka trošku nepravidelná). Presunieme na plech s papierom na pečenie a pečieme cca 15 minút, kým nie sú jemne zlaté, v rúre rozohriatej na 170°C.


Príjemné vianočné pečenie prajem. 


I am already addicted to this cookies. I've baked them for 3 times already and each time I hopped that at least something would last until Christmas, but that is impossible. The advantage of this cookies is, not only that the preparation is simple, but also they are healthier than other Christmas treats. Although in such quantities I have already eaten them, one can not talk about health any longer :-). I do not know how about you, but in our household, Christmas sweets taste even better before Christmas.



Mix butter with sugar until pale, add egg yolk and continue mixing. Sift both flours in the bowl followed by vanilla, lemon zest, cranberries and walnuts. Mix alltogether (in the standmixer it is pretty easy)  until the dough joins together, then wrap it up in cling film, and form the roll with about 5 cm in diameter  and refrigerate until firm or put it in the freezer for a while. Cut it to 1-1.5 cm thick circles  (you should get about 20 pcs) and press down on top of them a little (this is not necessary but I like it when they are not evenly flat). Move them on the tin linned with parchment paper and bake in the oven preheated to 170° C for about 15 minutes until they are slightly golden brown.

Krúpová polievka s kapustou / Barley soup with cabbage

Keď sa dni začnú ochladzovať a zima sa už neodvrátiteľne blíži, respektíve je už tu, mám potrebu jesť niečo výdatnejšie, čo zahreje, ale ja zároveň zdravé. Ideálnou voľbou na takéto dni je u mňa polievka. Tentokrát som pripravila hustú krúpovú polievku s kapustou, ktorú si môžete zabaliť aj so sebou do práce. Krúpová sa zvykne robiť z vývaru z údenej šunky, ale v našom, zdravšom prístupe vám bohate postačia cca 3 tenučké plátky slaninky, alebo napr. schwardzwaldskej šunky. Pokiaľ ste vegetariáni, alebo nič údené akurát po ruke nemáte, vôbec nevadí, polievočka bude aj tak výborná. 

S ďalšou zmenou s ktorou sa musím v tomto období vysporiadať je, že moje bylinky sú už zazimované. Samozrejme, nie že by sa čerstvé bylinky nedali kúpiť to nie, len na to akosi zabúdam, keďže som mala pár mesiacov k dispozícii plný balkón byliniek, a že sa im tento rok krásne darilo. Takže pri tejto polievočke si vystačíme so zásobami v kredenci a chladničke. 


Najprv si na malé kocky nasekáme všetku zeleninu a na troške olivového oleja ju za stáleho miešania restujeme spoločne so slaninkou, alebo šunkou, až kým jemne zozlatne. Pred koncom restovania pridáme cesnak a len krátko ho premiešame s restovanou zeleninou. Do hrnca pridáme krúpy a zalejeme vodou (množstvo vody záleží od toho akú hustú polievku chcete). Pridáme soľ, čierne korenie, bobkový list, nové korenie, feferónku a vopred namočené sušené huby. Spoločne varíme, kým krúpy nezmäknú, vtedy pridáme nakrájanú malú hlávku kapusty (hlúbik vyrežeme) a necháme variť, kým kapusta zmäkne. V prípade potreby ešte dochutíme a okyslíme červeným vínnym octom a pridáme petržlenovú vňať (ja mám svoju zamrazenú). Polievku buď podávame len tak, alebo s nastrúhaným syrom typu parmezán, grana padano, alebo pecorino.

When the days are getting cooler and the winter arrival is unavoidable, hence it is already here, I am in need to eat something heartier, something what warms me up and of course something healthy as well. And the perfect choice for me is a soup. This time I went with a hearty barley soup with cabbage, which you can take with you to work. In our country, a barley soup is usually made of smoked ham broth but in this case I chose healthier approach with barely 3 thin slices of bacon or some smoked ham, it will be just enough to get the final taste. And if you are vegetarian or just don't have any smoked stuff, forget adding it and I am sure that soup will still be just as great without it. 

There is another thing these days I need to carry in my mind when cooking and it is the fact that my "herb garden" has already taken its winter break. Of course I can buy fresh herbs but this is something I often forget as I was used to using mine for the past few months and let me tell you, this year they were absolutely prolific. So in this recipe we will only need stuff what's "on stock", in our cupboard and fridge.


First, dice all vegetables and sauté them on a splash of olive oil together with bacon or ham. Keep stirring constantly until it all becomes slightly golden. Before the end of sautéing, add chopped garlic and
just stir briefly with vegetables. Add barley folowing with the water to the pot (the amount of water depends on how thick soup you prefer). Season with salt and pepper, bay leafs, allspice and some chilli if you like and add pre-soaked dried mushrooms. Cook until barley is just tender. Then add chopped small cabbage head (cut out inner solid part of cabbage) and cook it until cabbage softens slightly. Season more if necessary and add chopped parsley (mine was frozen) and you will probably need to add some sourness as well. I used red wine vinegar. Serve the soup like plain or with grated cheese such as Parmesan , Grana Padano or Pecorino.

Víkend vo Viedni/Weekend getaway in Vienna

Dúfam, že z tohto výletu sa stane už tradícia. Tento rok to bolo po druhý krát, čo sme išli do Viedne kvôli hudbe a spojili to s pekným víkendom. Minulý rok to bol jeden z mojich obľúbencov, Bruce Springsteen a jeho energiou nabitý koncert k albumu Wrecking Ball. Tohto roku to bola moja najobľúbenejšia kapela vôbec. No už ani nie tak kapela ako jeden z jej bývalých členov Roger Waters. Ak niekto nevie o akú kapelu ide, tak je to Pink Floyd. Bolo to turné The Wall, jednoznačne najlepší koncert, na akom som kedy bola. Už by som sa mohla dostať aj k jedlu, však :-) ale to sa nedá, nespomenúť taký obrovský hudobný zážitok. Tento post neobsahuje žiaden recept, dúfam ale, že sa Vám bude páčiť aspoň týchto pár fotiek z Viedne aj s mojimi postrehmi. 

I hope that this trip will become a tradition. This year it was our second time that we went to Vienna because of the music and combine it with a nice weekend. Last year it was one of my favorite musicians Bruce Springsteen and his concert to the album Wrecking Ball. This year it was my favorite band ever. But it isn't actually  a band anymore but only its former member, Roger Waters. If there is anyone who doesn't know about what is the name of the band, it it's Pink Floyd. It was The Wall tour and it is by far the best concert I've ever been on. Hmmm I should finaly move forward to the food, shouldn't I :-) but it is not possible not to mention such a huge music experience. Although this post does not contain any recipe I hope that you'll enjoy few of our Vienna's picutres with my perceptions as well. 

Vždy keď som vo Viedni, veľmi rada absolvujem prechádzku po trhovisku Naschmarkt, kde nájdete všetko od exotického ovocia a korenín, cez čerstvé cestoviny, mäso až po výborné jedlo zo všetkých kútov sveta. 

I really enjoy the walk around the marketplace Nashmarkt everytime I am in Vienna. You can find there everything ranging from exotic fruits and spices, alongside with fresh pasta or meat, to delicious food of all kinds from around the world.
 
Tento rok sme si na večeru vybrali reštauráciu v srdci Naschmarktu, Neni. Jednoduchý a štýlový podnik s výbornou ponukou blízkovýchodných jedál v modernom poňatí. 

This year we chose to have a dinner at the restaurant in the heart of Nashmarkt called Neni. Simple and stylish restaurant with excellent selection of middle eastern dishes with a modern twist. 



Za zmienku stoja obe jedlá, ktoré sme si objednali. Ja som si vybrala korenené kuracie mäso na paprikách s hummusom a pitou. Priznám sa, že hummus som ešte nejedla pripravený na teplo, ale tá kombinácia ma dostala. Nedalo mi to a pripravila som si to aj doma po príchode, ale bohužiaľ sme to nestihli nafotiť, takže Vám to tu určite uverejním neskôr aj s receptom. Michal si dal New York Pastrami sandwich a taktiež bol výborný. Asi sa niektorí z Vás pýtajú, že čo to pastrami vlastne je ... Je to spôsob úpravy a konzervácie mäsa. Hovädzie mäso sa najprv naloží do slaného nálevu, nakorení sa a následne je vyúdené. Posledným krokom je jeho naparenie a následné plnie ražného sandwicha tenkými plátkami mäsa. Najčastejšie sa podáva s horčicou a kyslými uhorkami. V Amerike je to veľmi populárne jedlo, ktoré sa tam dostalo s rumunskými, židovskými imigrantmi. 

Both meals that we chose to have for dinner are definitely worth mentioning. My choice was spicy chicken with peppers served with hummus and pita. I must admit that I haven't eaten warm hummus before, but this combination trully got me. I decided to prepare it at home some time ago but unfortunately we did not manage to take a pictures of it. I will certainly post the recipe with pictures later on. Michal went with New York Pastrami sandwich which turned out to be an excellent choice as well. Some of you are maybe asking what the pastrami is...? It is the way of preserving meat. The beef meat is brined, seasoned, smoked and steemed before serving. Ray sandwich is filled with thin slices of this meat and usually is served with mustard and pickles. This meal is very popular especially in the USA where it arrived with Romanian Jewish imigrants. 



Ďalším naším obľúbeným miestom vo Viedni je Museums Quartier s množstvom galérií a podnikov. Je to veľmi príjemný verejný priestor vhodný na prechádzku, čítanie si, oddych, alebo spanie ako som si všimla.

There is another place in Vienna which we like very much and the place is the Museums Quartier with a lot of galeries and cafes. It is very enjoyable public space suitable for walk, reading, relaxing or even sleeping as I noticed.


Historická Viedeň má tiež svoje neopísateľné čaro. / Historical Vienna has also it's charming atmosphere. 

































Ku klasickej Viedni neodmysliteľne patrí kaviarenská kultúra. Určite vyskúšajte jednu z klasických kaviarní, akou je aj legendárne Café Sacher s ich ikonickým zákuskom, Sacherovou tortou. Pripravte sa však na to, že aj väčšina turistov vo Viedni má podobný zámer.

The cafe culture is inherently linked with clasic Vienna. You should try one of clasic Vienna's cafés for sure. One of these is legendary Café Sacher, famous for its iconic dessert, the Sacher torte (the Sacher cake). But bear in mind that most of the Vienna visitors have simmilar intention. 


Pred obdivovaním rušných hlavných ulíc dávame prednosť objavovaniu bočných uličiek a takto "nasávme" architektúru a atmosféru mesta. Vo všeobecnosti jedávam dosť veľa a pri prechádzkach taktiež potrebujem stále niečo jesť. :-) Medzi hlavnými jedlami je ideálne dať si len niečo malé do ruky (takto to volám ja). Moje požiadavky dokonale splnila bio pekáreň Joseph. 

Instead of admiring busy main streets, we prefer exploring quiet side streets and that is the way how we mostly enjoy the architecture and atmosphere of the cities wherever we go. I eat  a lot in general and I usually need to eat something all the time during our walks :-) Between main courses I prefer something little to go (as I call it). Organic bakery Joseph perfectly fulfilled my requirements.

No a k mojim potulkám po mestách zvyčajne patrí aj ranná zastávka v Starbuckse. Stále mi to pripomenie návštevu New Yorku, kde sme vždy ráno po 2 hodinách vo vlaku zamierili na Vanila Latte a niečo sladké.  

Morning stop at the Starbucks café usually belongs to my city walks. It remindes me my New York trips, when after 2 hours in train we always headed directly for Vanila Latte and something sweet.

Ricottové gnocchi s paradajkovou omáčkou/ Ricotta gnocchi with tomato sauce

Tieto gnocchi sú jemné a ľahučké, ideálne s nejakou ľahkou omáčkou, aby vynikla ich jemná chuť. Odporúčam, aby ste si zemiaky v šupke uvarili deň vopred a potom to už bude rýchlovka. 


Všetko spoločne zmiešame a vytvoríme cesto z ktorého na poriadne pomúčenej pracovnej ploche vaľkáme "šúľky", ktoré následne krájame na malé "ňočky". Tvar môžete zvoliť aký chcete, pokojne s nimi ešte prejdite cez vidličku, aby sa vám vytvorilo pruhovanie, alebo urobte v strede ryhu. Ja som si však pre tentokrát zvolila najrýchlejší a najjednochuší spôsob :-). Gnocchi varíme v osolenej vode, scedíme a pridáme priamo do horúcej omáčky, kde ešte chvíľočku všetko spoločne premiešame.

Jednoduchú paradajkovú omáčku si pripravíme tak, že na lyžici olivového oleja si orestujeme na jemno nakrájané 3 strúčiky cesnaku (pozor, aby vám nezhnedol, chceme len aby zavoňal). Pridáme asi 4 kúsky na drobno posekaných sušených paradajok a zalejeme plechovkou krájaných paradajok, alebo sparenými, ošúpanými a nakrájanými čerstvými paradajkami. Dochutíme soľou, čiernym korením, v prípade potreby troškou trstinového cukru a necháme zvariť na hustejšiu omáčku. 

Na záver pridáme čerstvú bazalku. Podávame posypané strúhaným parmezánom, zaliate troškou olivového oleja a extra lístkami čerstvej bazalky.

Dobrú chuť.


These gnocchi are soft and tender, perfect with some light sauce which does not supress delicate flavor of gnocchi. I recommend you to cook unpealed potatoes one day in advance to make the process fast and easy.

Mix all of the ingredients together to form a dough. Roll a piece of dough on a well floured surface to form a thumb wide cylinder and cut it into a small pieces - gnocchi. Feel free to shape them whichever way you want, for instance make ripples with fork or press them in the middle. For this time I have gone with the fastest and easiest way, simply cutting them :-) Cook gnocchi in salted boiling water, drain and toss them directly in a hot sauce for a moment.

Simple tomato sauce can be prepared according to the following method. Heat a tablespoon of olive oil in a pan and fry for a sec
finely chopped 3 garlic cloves (be carefull, you dont want to get it brown). Add about 4 pieces of finely chopped dried tomatoes to the pan and pour in a can of chopped tomatoes or boiled, peeled and chopped fresh tomatoes. Season with salt, pepper and a pinch of cane sugar if necesarry. Let the sauce cook down until it reaches nice saucy consistency. 

Finally, add some fresh basil leaves. Serve with grated parmesan cheese, drizzled with extra virgine olive oil and some more basil leaves.

Piknik / Picnic

Od kedy existuje tento blog chcela som pripraviť post na tému piknik. V zahraničí vidíte pekne upravené parky plné ľudí, ktorí tam len tak oddychujú, spia, čítajú knihy, hrajú hry, stretávajú sa s priateľmi, alebo jedia.

Ever since I started to write this blog I've always wanted to come up with the picnic post. When you are abroad, you can see all those beautiful parks full of people of all sorts, simply relaxing, taking nap, reading books, playing games, chilling out with friends or eating.  

Táto parková kultúra mi je veľmi blízka. Samozrejme sa najviac rozvinula vo väčších mestách, kde sa cení každý kúsok zelene. O mieste akým je Central Park v New Yorku asi ani hovoriť nemusím. Je to taká oáza počas prechádzok po "hučiacom" Manhattane. Vždy sme tam skončili s jedlom v ruke, alebo chladeným smoothie a pozorovali život v parku. Alebo také parky v Nórsku plné študentov hrajúcich frisbie, lezúcich po lanách (slacklining), alebo piknikujúcich. Teraz som sa vrátila z Mníchova a aj napriek nižším teplotám boli parky doslova plné ľudí užívajúcich si krásne babie leto.

I'm really fond of this park culture. Of course it is the most visible in the bigger cities, where every single piece of green land is valuable. There is no such, almost a cult place as the Central Park in New York. Oasis of peace during the strolls around hot and bustling Manhattan. I remember ourselves ending up our day with something to eat or ice cold smoothie in our hand and watching the park life. Also parks in Norway with all those students playing frisbie, practising slacklining or having picnic also remind me of relax opportunities, these parks help providing. I have just returned from Munich and despite lower temperatures, parks were literally full of people enjoying a beautiful Indian summer days.

Zaujímavý verejný priestor vyrástol aj v KE a je ním areál Kasárne/Kultrpark, kde sa v rámci rekonštrukcie starých kasárenských objektov a výstavby nových, zrevitalizoval aj priľahlý park, kde bol nafotený aj tento post.

Interesting public space has recently been presented to the people of Kosice and it was named the Baracks/Cultural park. Along with old and unused buildings of former military facilities, adjacent park has also been revitalised and we accepted this offered opportunity and shot our food post there.   


Týždeň po našej prvej návšteve tohto parku sme tam boli znova, tentokrát mimo organizovaných podujatí a s košíkom plným dobrého jedla. Takýto priestor sa totižto sám núka na piknik a ja som mohla konečne zrealizovať túto tému. To, že tieň stromov nám poskytol útočisko v horúci letný deň, bol len bonus k príjemne strávenému popoludniu vonku, a tento piknik je pre mňa synonymom pre leto v parku.

One week after our first visit (no event was taking place at that time), we came back again but this time it was with basket full of delicious food. Such space is an ideal place for a picnic and I could finally make this post. The fact that shade of trees offered us shelter in a hot summer day, was just a nice bonus to the afternoon spent there and this picnic is for me a synonym for the summer in the park.

Pripravovala som toho trošku viac, takže vám to tu rozpíšem s orientačnými receptami, keďže väčšina bola improvizácia. Takže sa nebojte a pustite sa aj vy do improvizácie :-)

I cooked more dishes at that time, so I write it down only with approximate recipes, since I ended up with improvising. So do not be afraid to experiment and season the food according to your tastes.

Žemľa s tapenádou z čiernych olív, grilovanou paprikou, červenou cibuľou, fetou a šalátom.
Najprv si ogrilujeme papriky, postup som už písala v tomto príspevku.
Na tapenádu v mixéri spoločne rozmixujeme plechovku čiernych olív, pár ančovičiek, pár lyžičiek kapár, cesnak, olivový olej, citrónovú šťavu, petržlenovú vňať, bazalku, soľ a čierne korenie.

First, grill the peppers, I have  already written the method in this post.
To prepare the tapenade just blend together one can of black olives (drained), couple of anchovie fillets, a couple of teaspoons of capers, garlic, olive oil, lemon juice, flat parsley, basil, salt and pepper.

Zcedenú plechvku tuniaka vo vlastnej šťave zmiešame s kukuricou, jarnou cibuľkou, olivovým olejom a čerstvým krémovým syrom typu Philadelphia, Lučina. Dochutíme soľou a čerstvo mletým čiernym korením.

Mix drained tuna can (in brine) together with corn, spring onions, olive oil and cream cheese. Season with salt and freshly ground black pepper.



Empanadas s mletým mäsom a kelom.
Recept na cesto na empanadas som prebrala odtiaľto (turntablekitchen) a je výborné. Na cesto zmiešame 1 a 1/4 hrnčeka hladkej múky a 1 hrnček celozrnnej múky, 1 a 1/2 č.l. soli a 115g studeného masla, kým to pripomína mrveničku. Prilejeme k nemu zmes z 1 vajca, 1/3 hrnčeka studenej vody a 1p.l. vínneho octa. Vypracujeme hladké cesto a necháme ho odležať v chladničke. O náplni len veľmi stručne, keďže som improvizovala a nepamätám si recept úplne presne :-) ale vôbec nepotrebujete veľa mäsa, ja som použila len cca 150-200g. Na olivovom oleji som orestovala cibuľu, cesnak a mleté mäso, pridala som údenú papriku, paradajky a asi 3 listy kelu, varíme kým má želanú konzistenciu. Dochutila som to soľou, čiernym korením, chilli a čerstvými bylinkami. Náplň je pred plnením potrebné nechať vychladnúť. Z tohto množstva pripravíte cca 10 empanadas. Pečieme do zlata na 180°C.

The recipe for the empanadas
dough is adapted from (turntablekitchen) and is very good. For the dough mix together 1 and 1/4 cup of all-purpose flour and 1 cup whole wheat flour, add 1 and 1/2 tsp of salt and 115 g of cold butter and mix until it looks like bread crumbs. Pour into a mixture of 1 egg, 1/3 cup of cold water and 1tbsp of wine vinegar. Prepare a smooth dough and let it rest in the refrigerator. About the filling just very briefly as I cannot remember it exactly :-). We don't need much meat for the recipe. I added roughly 150-200 g. Sauté onion, garlic and minced meat on a splash of olive oil, then add smoked paprika, chopped tomatoes and about 3 leaves savoy cabbage, cook until it has desired consistency and season with salt, pepper, chilli and fresh herbs. Chill the filling before making your empanadas. I was able to make about 10 empanadas out of this amount of dough and filling. Bake until golden brown on 180°C.


Šalát z pšena, čerstvej zeleniny a byliniek.
Pšeno si uvaríme podľa návodu na obale a necháme vychladnúť. Potom už len zmiešame s nadrobno nasekanými paradajkami, uhorkami, červenou cibuľkou a peknou kopou byliniek ako petržlenová vňať a mäta. Pridáme extra panenský olivový olej a dochutíme citrónovou šťavou a soľou.

Cook the millet according to the package instructions and let it cool. After that just mix with finely chopped tomatoes, cucumbers, red onion and a nice bunch of fresh herbs such as parsley and mint. Add extra virgin olive oil and season with lemon juice and salt.


Ovocný šalát osladený agávovým sirupom s limetkou a mätou.
Myslím, že toto nepotrebuje vysvetlenie :-) Samozrejeme agávový sirup môžete nahradiť ľubovoľným sladidlom, alebo ho vynechať. Ale ja strašne rada používam na rôzne účely rôzne druhy sladidiel, veď len cukrov mám doma zo 5 druhov a ďalej je to už spomínaný agávový sirup, ktorý je perfektný napríklad do limonád alebo ľadových čajov, keďže má neutrálnu chuť. Je proste len sladký. Ďalej hlavne na jogurt a na lievance používam javorový sirup. Kvalitný biely jogurt s javorovým sirupom je môj favorit. No a o mede tu určite písať nemusím :-)

I think this needs no explanation :-) Of course you can replace agave syrup with any other sweetener or omit it entirely. I love using
different types of sweeteners for various purposes. I have for instance five types of sugar at home and besides agave syrup, which is perfect for example in the lemonade or iced tea, as it has a neutral taste. It is just sweet, with no flavor. Furthermore, especially for the yogurt and pancakes I prefere maple syrup. Good quality plain yogurt with maple syrup is my favorite treat. And I think that there is no need writing about honey here at all :-)

Melónová šťava s mätou a limetkou. 
Špeciálne toto leto som bola na melónoch doslova závislá. Skoro každý deň som zjedla aspoň štvrť melóna.

Especially this summer, I was literally addicted to water melons. I was eating at least a quarter of it almost every day.


Keď to tak teraz píšem (po veľmi dlhom čase), tak by som si dala..... hmm.....asi všetko :-)
Toto bol síce náš letný piknik, ale krásne slnečné dni babieho leta sa ešte dajú využiť a užiť si akékoľvek jedlo vonku.

Writing about it (after such a long time) making me feel like having ..... hmm ..... it all right now :-)
Although this was our summer picnic, such beautiful sunny days of Indian summer still offer possibility of enjoying  your whatever meal outdoors.

Zeleninová tortilla so salsou z grilovanej kukurice / Vegetable tortilla with grilled corn salsa

Jedna klasika osviežená výbornou salsou z grilovanej kukurice. Že ste kukuricu ešte negrilovali...tak to musíte čím skôr vyskúšať. Netrvá to o nič dlhšie, ako by ste ju varili a pritom jedlu dodá nový rozmer.
Nevedela som sa rozhodnúť ako toto jedlo nazvem, na Slovensku by sa volalo omeleta, ale Taliani by to nazvali fritatta a Španieli tortilla de patatas (patatas po španielsky zemiaky) a keďže tá moja omeleta obsahuje zemiaky a je hrubšia ako klasická omeleta nazvala som ju tortilla. Doplnila som ju ešte o ďalšie skvelé suroviny ako o cukinu, papriku, petržlenovú vňať a syr Pecorino, ktorý má výraznú chuť a ostrú arómu a v niektorých jedlách ho uprednostňujem pred pramezánom.


Na troške olivového oleja orestujeme cukinu, cibuľu a papriku, potom pridáme zemiaky a petržlenovú vňať. V miske si rozmiešame vajíčka so syrom pecorino, ochutíme a zalejeme nimi orestovanú zmes. Tortillu dokončíme pod grilom. Pokiaľ nemáte panvicu vhodnú do rúry pokojne tortillu môžete upiecť priamo v rúre v dobre vymazanej forme. Na salsu si na grilovacej panvici, alebo grile zo všetkých strán opečieme kukuricu, semiačka zrežeme a zmiešame s nadrobno nasekanými ostatnými surovinami a dochutíme limetkovou šťavou, soľou, čerstvo mletým čiernym korením a čerstvými bylinkami.

One very classic dish refreshed with delicious grilled corn salsa. If you have never grilled corn before, you should definitely try it. It takes not longer than cook it in the water but it gives a new dimension to the dish. I couldn't decide how to name this dish. In Slovakia it would be called omelette, but Italians would call it fritatta and Spanish tortilla de patatas (patatas in Spanish mean potatoes) and as my omelette contains potatoes and is thicker than the classic omelette I called it tortilla. Besides potatoes I added to my trotilla other great ingredients like the zucchini, peppers, parsley and pecorino cheese, which has a distinctive sharp flavor and smell and in some dishes I prefer pecorino rather than pramesan cheese.




Preparation is easy. Simply sautee zucchini, onion and pepper together on a splash of olive oil, season then add potatoes and parsley leaves. In a separate bowl beat the eggs with pecorino cheese, season and pour over the sauted mixture, fry and  finish under the grill. If you do not have a suitable pan which can be safely used in the oven, you can bake it directly in the preheated oven in the well greased baking pan. For the salsa grill the corn on a gridle pan or on the grill on all sides, then cut off the grains, mix with other ingredients cut on small pieces and season with lime juice, salt, freshly ground pepper and fresh herbs.

Gazpacho je vynikajúca španielska studená polievka. Je najlepšie si ju pripraviťv lete, keď je všetka zelenina vo svojej najlepšej sezóne a najlepšej chuti. Táto polievka sa zvykne nazývať aj Gazpacho Andaluz a v minulosti jej základ tvoril starý chlieb, ocot, cesnak, olivový olej a voda. Zelenina sa pridala až časom a v horúcich letných mesiacoch slúžila ako na zasýtenie, tak na doplnenie tekutín a živín pre roľníkov pracujúcich na farmách. Dnes si túto polievku veľmi rýchlo a jednoducho pripravíme v mixéri, ale ako som sa dočítala v Španielskej Kulinárii, v minulosti sa pripravovala v mažiari. Túto polievku vám odporúčam na leto, ako rýchly a zdravý obed. Podávať ju môžete len tak, alebo s nadrobno pokrajanou zeleninou, krutónmi, sušenou šunkou, alebo napríklad syrom Manchego.






Všetko spoločne rozmixujeme do hladka a dochutíme podľa vlastnej chuti. Pre dosiahnutie želanej konzistencie vodu prípadne prilejeme, alebo uberieme. Pred podávaním vychladíme.

Excellent Spanish cold soup. It is best to prepare it during summer, when all the vegetables are in their best season, and tasting simply the best. This soup is usually called Gazpacho Andaluz and in the past it consisted only of the stale bread, vinegar, garlic, olive oil and water. Vegetables were added later and it was great liquid, nutritious and rich  food for farmers during the hot summer months. Today, this soup is very quick and easy to prepare in a blender, but in the past, all what was available was a mortar and pestle as I read in the Culinaria Spain book. I can only recommend this soup to you especially in the summer, as a perfect quick and healthy lunch. It can be served plain or seasoned with finely chopped vegetables, bread croutons, dried ham or Manchego cheese for instance.






Blend everything together until nicely smooth. Add more water or decrease the amount of water to get  the desired consistency. Season according to your taste and refrigerate before serving.
